Description

This Rice Krispie ice cream recipe combines crispy cereal with creamy vanilla for a fun, nostalgic dessert that’s perfect for summer!


Ingredients

Scale
  • 2 cups Rice Krispies cereal
  • 2 tbsp unsalted butter
  • 1 tbsp brown sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tbsp vanilla extract

Instructions

  1. In a pan over medium heat, melt butter and add brown sugar.
  2. Stir in Rice Krispies and toast for 2–3 minutes until golden.
  3. Set aside to cool completely.
  4. In a bowl, mix heavy cream, milk, sugar, and vanilla until sugar dissolves.
  5. Pour mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  6. During the last few minutes of churning, add the toasted Rice Krispies.
  7. Transfer to a container and freeze for at least 4 hours before serving.

Notes

For extra texture, reserve some toasted Rice Krispies to sprinkle on top before serving.
